Texas Green Sauce Red Beans and Rice: A 40-Minute Louisiana Classic

Red beans and rice is a Louisiana classic that usually means a long simmer and a spice cabinet full of jars. This version is done in 40 minutes, and one jar does the seasoning: smoky andouille sausage, kidney beans, tomatoes, and 3 to 4 tablespoons of Texas Green Sauce spooned over a bed of white rice.

We dropped the garlic, oregano, and black pepper from the usual lineup. The sauce brings the jalapeño heat and the depth, so all you add at the end is a pinch of salt.

Ingredients

Serves 8. Prep time: 10 minutes. Cook time: 30 minutes.

• 3 to 4 tablespoons Texas Green Sauce, Original or HOT
• 2 cups water
• 1 cup uncooked white rice
• 1 (16 oz.) package andouille sausage, sliced on the diagonal into 1/4-inch rounds
• 1 onion, chopped
• 1 green bell pepper, chopped
• 2 (15 oz.) cans kidney beans, drained
• 1 (16 oz.) can whole peeled tomatoes, chopped, juice reserved
• Salt to taste

Instructions

1. Bring the water to a boil in a saucepan. Stir in the rice, turn the heat down, cover, and simmer for 20 minutes.
2. While the rice cooks, brown the andouille in a large skillet over low heat for about 5 minutes.
3. Add the onion and green bell pepper to the skillet and cook until soft.
4. Stir in the kidney beans, the tomatoes with their juice, and 3 to 4 tablespoons of Texas Green Sauce.
5. Simmer uncovered for 20 minutes. Taste, add salt as needed, and serve over the rice.

Make It Your Own

Want more heat? Finish each bowl with an extra spoonful of HOT. Leftovers are even better the next day once the sauce has had time to soak in.
