Breakfast tacos with green sauce take 15 minutes and one skillet. Soft scrambled eggs, sharp cheddar, refried beans, fresh pico, and a layer of Texas Green Sauce on a warm flour tortilla. That's the whole recipe.
The sauce is what makes it work on a weekday. Instead of chopping jalapeños at 6:45 AM, you open a jar. Ours is made in small batches in Whitehouse, Texas, with fresh jalapeños and a balance of flavor and heat.
Which Sauce to Use
- Original for family breakfast. Enough heat to matter without running the kids off.
- HOT for the heat seekers.
- Smokeshow with chorizo or brisket. The fire-roasted jalapeños and chipotle were made for it.
Ingredients
Makes 4 tacos.
- 1/4 cup Texas Green Sauce
- 3 large eggs
- 1 tablespoon whole milk
- 1 tablespoon unsalted butter
- 1/2 cup shredded sharp cheddar cheese (about 2 oz.)
- 4 (6-inch) flour tortillas
- 1/4 cup fresh pico de gallo
- 1/2 cup refried beans
Instructions
- Whisk the eggs and milk in a medium bowl until well blended.
- Pour the mixture into a nonstick skillet and add the butter. Cook over medium-low heat, stirring often with a silicone spatula, until the curds are set but still tender, about 4 to 5 minutes. Low heat keeps them from going rubbery.
- Warm the tortillas in a dry skillet while the eggs cook.
- Spread a thin layer of refried beans on each tortilla. Top with cheddar, then the hot eggs so the cheese melts.
- Finish with Texas Green Sauce and pico de gallo. Serve.
Make It Heartier
Add sausage, bacon, chorizo, or leftover brisket. Cook the meat first and layer it on top of the beans.
