The Ultimate BBQ Side Dish
This ain't your grandma's potato salad! We've taken this classic side dish and given it a smoky Texas twist with our new SmokeShow Texas Green Sauce. Creamy Yukon golds meet crispy bacon and fresh vegetables, all brought together with a dressing that delivers the perfect balance of smoky, tangy, and creamy flavors. Ingredients
- 1 lb Yukon gold potatoes, cut into bite-sized chunks
- Olive oil for drizzling
- ½ cup mayonnaise (we recommend Duke's)
- ¼ cup SmokeShow Texas Green Sauce
- 1-2 tablespoons yellow mustard
- ¼ purple onion, finely chopped
- 1 celery stick, finely chopped
- 6 slices thick-cut bacon
- Salt and pepper to taste
Instructions
- Cook the Potatoes: Bring a large pot of salted water to boil. Add potato chunks and cook for 15-20 minutes until fork-tender but still holding their shape. Alternatively, toss with olive oil and roast at 400°F for 25-30 minutes.
- Prepare the Bacon: While potatoes cook, fry bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels and let cool completely before crumbling.
- Make the Dressing:
- In a large mixing bowl, whisk together mayonnaise, SmokeShow Texas Green Sauce, and yellow mustard
- Mix until smooth and well combined
- Add finely chopped purple onion and celery
- Assembly:
- Drain potatoes well and let cool for 5 minutes
- Add potatoes to the bowl with dressing and gently fold together
