Prep Time: 25 minutes Cook Time: 20 minutes Total Time: 45 minutes Servings: 4 people

Ingredients

  • 1 lb Yukon gold potatoes, cut into bite-sized chunks
  • Olive oil for drizzling
  • ½ cup mayonnaise (we recommend Duke's)
  • ¼ cup SmokeShow Texas Green Sauce
  • 1-2 tablespoons yellow mustard
  • ¼ purple onion, finely chopped
  • 1 celery stick, finely chopped
  • 6 slices thick-cut bacon
  • Salt and pepper to taste

Instructions

  1. Cook the Potatoes: Bring a large pot of salted water to boil. Add potato chunks and cook for 15-20 minutes until fork-tender but still holding their shape. Alternatively, toss with olive oil and roast at 400°F for 25-30 minutes.
  2. Prepare the Bacon: While potatoes cook, fry bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels and let cool completely before crumbling.
  3. Make the Dressing:
    • In a large mixing bowl, whisk together mayonnaise, SmokeShow Texas Green Sauce, and yellow mustard
    • Mix until smooth and well combined
    • Add finely chopped purple onion and celery
  4. Assembly:
    • Drain potatoes well and let cool for 5 minutes
    • Add potatoes to the bowl with dressing and gently fold together
    • Top with crumbled bacon and fold once more
    • Season with salt and pepper to taste

Pro Tips

  • Choose Yukon gold potatoes - they're creamy but hold their shape perfectly
  • Don't overcook the potatoes or they'll become mushy
  • Salt your potato water generously for maximum flavor
  • Let potatoes cool slightly before mixing to prevent the mayo from breaking
  • This salad tastes even better the next day after flavors have melded

Make Ahead & Storage

  • Store covered in the refrigerator for up to 3 days
  • Actually improves after sitting overnight as flavors develop
  • Give it a gentle stir before serving leftovers
  • Best served hot or cold, whatever your preference

Recipe Variations

  • Extra Smoky: Add a tablespoon more SmokeShow sauce
  • Heat Levels: Try both Original and Hot Texas Green Sauce mixed with SmokeShow
  • Add-In Options:
    • Hard-boiled eggs, diced
    • Fresh chives or parsley
    • Diced pickles for extra tang
